Making the most of your mushrooms

If Covid, or the holiday rush kept you from ordering from a REKO ring or stopping at a local farmgate, and you didn’t get to chat with your farmer about how to make the most out of the produce. Look no further! I’m going to let you in on a few tips courtesy of the one and only Madi Mushroom.

HighBrit Beef: Reconnecting with your food

A big part of the holiday season is connection. For most it’s with family and friends, but 2020 has also highlighted the need to reconnect with our food and producers. This connection with consumers, and transparency of the production process is a major focus for HighBrit Beef year-round.

Buying fresh, local, seasonal produce that’s been grown sustainably, is something that I’ll be doing this year.

I’m also going to take a moment to reflect on those things closest to my heart. Good friends, loving family, great food, and the amazing bounty we have available to us right here in Australia.

9Dorf: Fabulous farmed fish from the Lockyer Valley

Barbequed barramundi is the go for a slow summer evening with family and friends. Stuff it with ginger and herbs and a lick of butter if you go for a whole fish, or a spicy macadamia crust if you want fillets that will wow the fussiest palate. There is a seemingly endless array of recipes on the internet – find one that smells good!! and go for it or try this one recommended by the grower.

Our Food System

As I prepare for our Christmas feast this year, I’m giving thanks to the farmers who have worked tirelessly to grow and produce the incredible food we’ll eat together.

Crows Nest Soft Drinks

Put out some of these icy cold bottles and you won’t need Christmas decorations. I’m serious. A few Crows Nest Soft Drinks along your table, on your drinks cart or in your esky will make you feel your place is adorned with sparkling Christmas baubles. And then you open the fizz and you know it’s time to celebrate.

Blue Dog Farm

As part of our Farmers For Your Festive Feed campaign we have been fortunate enough to get to know some pretty impressive local producers and makers. There are however few that match the energy of Jacki from Blue Dog Farm. Aside from being a very active advocate in the space, Jacki grows microgreens for her ‘really fancy’ salad, packed full of as much flavour as she is!
Check out the video we put together, or even better, get out to the farm yourself for a tour and a bag of a salad mix so good, it can hardly be considered salad anymore!
